Item No caminho do sabor e da cultura - transmissão geracional de receitas típicas baianas(Universidade Católica do Salvador, 2019-03-20) Santana, Anaildes Batista Cruz; Rabinovich, Elaine Pedreira; http://lattes.cnpq.br/1594550972937138; Costa, Larissa Alves de Sousa; Costa, Lívia Alessandra Fialho daThe present research had as objective to know how the identity culinary Brazilian roots are present in contemporary families of state of Bahia through their generations. For that, a qualitative research was carried out, which used the multiple case study as the access method. It was used as instrument a semi-structured questionnaire with open questions to three families in the cities of Salvador, Mata de São João and Lauro de Freitas. The interviews were carried out in the residences of the respective families with day and time previously scheduled. To analyze the data, the descriptive method was used with distribution of the results in tables and, later, its organization in the form of thematic units, resulting in three themes: Generational transmission of customs, beliefs and values; Commensality, family life and olfactory memories; Recipes and their transformations. It was observed that culinary family heritages were passed differently in each family, out of necessity, affinity or curiosity, and that in all families these gastronomic heritages were maintained. Generally speaking, generation becomes the measure of the change in the economic, social and cultural contexts in which the family members were inserted. The changes were related to the period in which each generation lived or lives, and the experiences were marked by time and by periods with important repercussions for the understanding of issues related to transgenerations. In each family, it was observed daily lives marked with a particular style of "being together", respecting the space of the other and preserving and disseminating the family culture, keeping alive its originality. It was concluded that, even in the present day where the gastronomic diversity and practicality take over the market, the gastronomic heritages of these families contribute to the formation of the new generations, besides being a legacy to the memories of each one of these people. Thus, the cultural roots of our ancestors continue to be present in contemporary families of the State of Bahia, and even with changes of habits and customs in the face of globalization and current technologies, the need to share knowledge and preserve their origins emerged as essential for the identity of these families.
