Abstract
The high nutritional quality of hen's eggs and their excellent cost-benefit justifies the high
degree of acceptance by consumers. However, the sanitary quality must be taken into account,
due to the increasing number of food outbreaks by Salmonella sp. Thus, the objective was to
comparatively evaluate the sensory quality and hygienic sanitary conditions of hen's eggs sold
in street markets and supermarkets in different neighborhoods of Salvador-Ba. Thirty units of
randomly acquired hen eggs were analyzed without observing expiration dates or other
hygienic-sanitary standards required by legislation. A checklist was then applied to verify the
internal and external characteristics of eggs, the profile of traders and their commercial
establishments, the presence of mandatory labeling on packaging as established by Resolution
No. 35/2009 of the National Health Surveillance Agency. It was noted that the chicken eggs
sold in the fairs in the neighborhood of Sete Portas and Calçada had unsatisfactory results,
including the eggs sold in supermarkets in these neighborhoods, even though they were in
proper packaging and labeling, the appearance of chicken eggs in the supermarket in the
neighborhood of Sete Portas and Calçada, did not meet the sensory quality requirements. As
for the profile of merchants, most were in compliance, however the survey is still needed to
guide merchants on how to conserve and expose eggs and for consumers regarding care in the
purchase, preparation and consumption of hen eggs.
