However, the sanitary quality must be taken into account, due to the increasing number of food outbreaks by Salmonella sp. Thus, the objective was to comparatively evaluate the sensory quality and hygienic sanitary conditions of hen's eggs sold in street markets and supermarkets in different neighborhoods of Salvador-Ba. Thirty units of randomly acquired hen eggs were analyzed without observing expiration dates or other hygienic-sanitary standards required by legislation. A checklist was then applied to verify the internal and external characteristics of eggs, the profile of traders and their commercial establishments, the presence of mandatory labeling on packaging as established by Resolution No. 35/2009 of the National Health Surveillance Agency. It was noted that the chicken eggs sold in the fairs in the neighborhood of Sete Portas and Calçada had unsatisfactory results, including the eggs sold in supermarkets in these neighborhoods, even though they were in proper packaging and labeling, the appearance of chicken eggs in the supermarket in the neighborhood of Sete Portas and Calçada, did not meet the sensory quality requirements. As for the profile of merchants, most were in compliance, however the survey is still needed to guide merchants on how to conserve and expose eggs and for consumers regarding care in the purchase, preparation and consumption of hen eggs.Item Impacto do aleitamento materno na prevenção da leucemia infantil(Universidade Católica do Salvador, 2021-12-14) Silva, Paloma Souza; Souza, Claudineia Almeida de; http://lattes.cnpq.br; Mota, Arcilândia da Silva Alencar; http://lattes.cnpq.br; Cordeiro, Danusa Antunes de; http://lattes.cnpq.brIntroduction: Recent data from the literature prove the effectiveness of breastfeeding in reducing the risk of childhood leukemia, among these studies, a meta-analysis found that 14 to 19% of all cases of children with leukemia can be prevented through exclusive breastfeeding until 6 years of age. months. Therefore, the aim of this article is to assess the impact of breastfeeding on the prevention of childhood leukemia. Methodology: Narrative review, search for articles in the Medline databases (PubMed), the Scientific Electronic Library Online (SciELO), the Latin American and Caribbean Literature in Health Sciences (LILACS) and the Virtual Health Library (VHL) ), in the years 2010 to 2020, including original articles, of the case-control, ecological, sectional, and cohort types, samples of children, of both sexes, diagnosed with leukemia. Results and Discussion: Breastfeeding for a longer period does not decrease the risk of ALL because of the change in nutritional composition throughout lactation, as it is known that breast milk undergoes adaptive transitions for each phase of the baby. There is a higher concentration of proteins in colostrum and transitional milk, as well as a higher concentration of antioxidant vitamins, when opposed to mature milk, in addition to maternal nutrition, gestational age, circadian rhythm, among other factors. Final considerations: The results of the studies confirm the veracity of the beneficial effect of breastfeeding in relation to reducing the risk of childhood leukemia due to its immunological properties.Item Efeito do uso de probióticos sobre os sintomas da depressão: revisão sistemática(Universidade Católica do Salvador, 2021-12-13) Santos, Dhafine Palhano Tavares; Menezes, Gisele Barreto Lopes; http://lattes.cnpq.br; Santos, Isabel Reis Oliveira dos; http://lattes.cnpq.br; Brandão, Najara Amaral; http://lattes.cnpq.brIntroduction: Considered the “evil of the century”, depression is a contemporary phenomenon, due to the high epidemiological indices. Scientific studies demonstrate that the use of probiotics can be beneficial in reducing depressive symptoms, as they can act on stimuli in the brain centers that initiate behavioral responses. Objective: Systematically review, randomized clinical studies involving probiotic supplementation and its effects on depressive symptoms. Methodology: A systematic search in the SciELO, BVS, Pubmed and LILACS databases was performed, resulting in the selection of 10 double and triple-blind clinical studies, randomized and placebo-controlled on the use of probiotics as an adjuvant treatment for depression. Data were presented in a table, containing information such as probiotic strains, treatment duration and psychological outcome. Results: Eight articles showed a significant beneficial effect regarding the reduction of depressive symptoms or depression scales, with Lactobacillus and Bifidobacterium being the most used probiotic strains. Conclusion: The use of probiotics to alleviate depressive symptoms shows promising results, but larger and more rigorous randomized, double-blind, placebo-controlled clinical trials are still needed to assess these conclusions.Item Consumo alimentar de um grupo de atletas amadores de MMA durante o treinamento e competição: estudo descritivo(Universidade Católica do Salvador, 2020-06-15) Mota, Jaqueline Santos; Souza, Claudineia Almeida de; http://lattes.cnpq.br/; Almeida, Rafael Souza de; http://lattes.cnpq.br/; Barreto, Jaqueline de Almeida; http://lattes.cnpq.br/Mixed martial arts (MMA) is defined as a flexible sport and in order to balance these MMA disputes, competitions are separated by weight and age categories. To reach the desired category, athletes perform rapid weight loss, using strategies such as saunas, use of laxatives and mainly reducing food consumption during the competition period. Therefore, the objective of the study was to evaluate the food consumption of a group of amateur martial arts athletes residing in Salvador-Ba, during the training and competition period. For data collection, two 24-hour recalls were used, in which they were analyzed by the Software Dietpro, tabulated in the Excel program and later compared with the recommendations of the Brazilian Society of Medicine, American College of Sports Medicine and the Dietary reference intakes. According to the results found, during the training period the amateur athletes managed to reach the recommendations of protein, vitamin B3, calcium and iron, however during the competition period there was a considerable reduction in food consumption and only the male sex managed to reach vitamin B3 recommendations. It is concluded that during the training period, amateur athletes have an inadequate diet, with high consumption of processed foods and during the competition period they tend to reduce food consumption, without worrying about the possible consequences.Item Condições de higiene das instalações, equipamentos e utensílios em um restaurante universitário na cidade do Salvador(Universidade Católica do Salvador, 2020-06-08) Moura, Rebeca Silva; Fontes, Sheila Suarez; http://lattes.cnpq.br/; Neves, Sara Parente; http://lattes.cnpq.br/; Rodrigues, Ana Carolina Borges da Cruz; http://lattes.cnpq.br/Introduction: The main factors for the appearance of foodborne diseases (OTD) are inadequate practices, including poor hygiene of the facilities, equipment and utensils used, which is one of the most important processes for the elimination of microorganisms. To ensure the safety of the food offered, it is necessary to implement good manufacturing practices. Objective: To identify the hygienic-sanitary quality through an observational questionnaire the hygiene conditions of facilities, equipment, and utensils in a university restaurant in the city of Salvador - Bahia. Methodology: Descriptive observational study with data collected in September 2019. To diagnose non-conformities, a checklist based on the legislation in force in the country was used, with three blocks containing 30 items in them. Results: Through the checklist, 36.67% of the non-conforming items were found, this result classified the restaurant in group 2 according to Anvisa classification. Therefore, the present study aims to gather information, through a literature review, that addresses the association of human exposure to pesticides and the impacts that can cause human health was used in this narrative review, the PubMed database, involving studies between the period 2010 to 2020. Objective: This paper aims to investigate what the literature brings about the characterization of the anthropometric profile of university students. Methodology: A bibliographic review was carried out in the databases of the portal of journals of the Higher Education Personnel Improvement Coordination, taking as inclusion criteria original articles published from 2008, which have evaluated the anthropometric profile of university students. The exclusion criteria were articles that were related to the anthropometric profile of students in kindergarten, elementary school, high school and review 5 articles. Results: overweight / obesity was addressed among undergraduate health students from Brazil, as well as socioeconomic relationship with overweight / obesity, and students who had eating disorders related to overweight / obesity. Food is one of the most important tools to increase life quality to diabetics patients. It is important to discuss practical topics about that matter. This paper proposes changes in Brazil’s family minimal food supply to adequate it to diabetics and compare prices from both in places that sells food at Salvador, Bahia, aiming to research purchasing power of diabetics from lowest economic class levels. Results show that in a rich neighborhood peixes are higher and in periferic places the biggest problem is the absence of many specific products for patients. It is needed to improve income and food habits from people of lower economic classes.Item Efeito do resveratrol nas doenças cardiovasculares e seus fatores de risco: revisão narrativa da literatura(Universidade Catolica de Salvador, 2019-06-10) Moura, Sarah Almeida; Leite, Catarina Lima; lattes.cnpq.br; Leite, Catarina Lima; lattes.cnpq.br; Bahia, Marluze; lattes.cnpq.br; Santos, Cátia Regina Bispo dos; lattes.cnpq.brIn view of the increasing rates of chronic noncommunicable diseases (NCD) in the population, it was necessary to investigate new strategies to combat cardiovascular diseases and their risk factors (hypertension, diabetes, obesity and hypertriglyceridemia). Resveratrol polyphenol has attracted significant interest through the well-known French paradox and has been shown to be efficient in the treatment of CNVV. Objective: To review the literature on the use of resveratrol in cardiovascular diseases and its risk factors. Methodology: This is a review of the literature, with searches in the medline database (Pubmed) and SciELO. DECS resveratrol, cardiovascular disease, atherosclerosis, type 2 diabetes mellitus, Sirt1 and their respective English correlates were used. It included articles in humans, both sexes, aged above 18 years that presented cardiovascular disease or predisposition to develop it. Results: Eleven studies were included between 2011 and 2017, where 81.81% (n = 8) presented positive results, with insulin resistance and blood pressure being the most sensitive parameters. CONCLUSION: Resveratrol may be an important ally in the treatment of CNCDs, but more human studies are needed for assertive statements of its efficacy.Item Efeito dos probióticos nas dislipidemias: a scoping review(Universidade Católica do Salvador, 2019-06-07) Santos, Isabel Reis Oliveira dos; Ferreira, Andréa Jaqueline Fortes; lattes.cnpq.br; Menezes, Gisele Barreto Lopes; lattes.cnpq.br; Meneses, Gisele Barreto Lopes; lattes.cnpq.br; Cerqueira, Lara Gabriela Araújo; lattes.cnpq.br; Barreto, Iasmim Santos; lattes.cnpq.brDyslipidemia is a major risk factor for chronic noncommunicable diseases and has been associated with changes in the composition of the intestinal microbiota and intestinal barrier, leading to a number of health disorders, such as intestinal dysbiosis. The consumption of probiotics has been pointed out as a therapeutic alternative for the treatment of dyslipidemia. Objective: To review the literature on the effect of probiotics in the treatment of dyslipidemia. Methodology: This is a literature review of the scoping review type, with a search in the databases Medline (PubMed), SciELO, VHL and LILACS. The probiotic DECS, dyslipidemia, hypercholesterolemia, hypertriglyceridemia and intestinal microbiota, and their respective correlates were used for the English language. We included articles in humans, of both sexes, aged over 18 years and presenting the values of lipid fractions before and after treatment with probiotics. Results: We included 16 studies between the periods 2009 to 2018, where 81,25% (n = 13) had positive effects, from 3 weeks, with total cholesterol and low density lipoprotein being the most action sensitive parameters of probiotics. Conclusion: Probiotics may be an important adjunct in the treatment of dyslipidemia, however, due to the great heterogeneity of studies, considering the new thematic, it is important to continue the studies on the subject in humans.Item Consumo de alimentos em sacarose entre crianças e adolescentes com anemia falciforme: um estudo transversal(Universidade Católica do Salvador, 2019-06-07) Bahia, Francine Coutinho; Albuquerque, Carolina Alves Rolim de; lattes.cnpq.br; Melo, Daniela Santos; lattes.cnpq.br; Melo, Daniela Santos; lattes.cnpq.br; Trindade, Geiza Santana Neri; lattes.cnpq.br; Menenses, Gisele Barreto Lopes; lattes.cnpq.brTo investigate the consumption of some sucrose-rich foods among children and adolescents with sickle-cell anemia attending a referral health unit in Salvador-BA. Methods: The sucrose consumption data were collected through the Food Frequency Questionnaire (FFQ). The frequency of consumption was stratified into: (a) Never/rare; (b) 1 to 3 times/month; (c) once a week; (d) 2 to 4 times a week; (e) 4 or more times in the week. The data were analyzed through spreadsheets and graphs of the program Microsoft Office Excel ® 2007. Results: Of the children and adolescents evaluated, 85% reported consuming bullet, chewing gum, lollipop and jujube, 30% chocolate in bar, 71% traditional refrigerante, 59% artificial refreshment, artificial juice 45%, and stuffed biscuit 64%. In the evaluation of the frequency of consumption by children and adolescents, the majority reported consumption as "never/rare", for bar chocolate 69,0% (n=29/42) and artificial juice 54,7% (n=23/42). Consumption of 2 to 4 times in the week of bullet, chewing gum, lollipop and jujube was 28,5% (n=12/42), traditional refrigerant of 23,8% (n=10/42), artificial refreshment 21,4% (n=9/42), and stuffed biscuit 28,5% (n=12/42). Conclusion: In general, children and adolescents with sickle cell anemia consume foods rich in sucrose, making this population more susceptible to the development of insulin resistance and metabolic complications.Item Influência das alterações de deglutição no estado nutricional de indivíduos idosos em um abrigo de Salvador - Bahia: um estudo transversal(Universidade Católica do Salvador, 2018-12-10) Santos, Denise Terezinha Santana; Santos, Denise Terezinha Santana; Albuquerque, Carolina Alves Rolim de; lattes.cnpq.br; Leite, Catarina Lima; lattes.cnpq.br; Albuquerque, Carolina Alves Rolim de; lattes.cnpq.br; Perdigão, Maria das Graças; lattes.cnpq.brThe elderly due to changes in physiology and neurological and degenerative disorders often present swallowing changes, with a significant impairment of their nutritional status, leading to an increased risk of severe malnutrition. Objectives: To know the nutritional status and risk of developing malnutrition and to identify the prevalence of signs and symptoms of swallowing changes reported by elderly residents. Method: A cross-sectional, quantitative, descriptive study on changes in swallowing. The sample studied was of convenience, represented by 14 individuals in a long-term institution located in a neighborhood in the city of Salvador, Bahia. To identify the signs of swallowing changes, the Eating Assessment Tool swallowing complaints questionnaire was applied and a nutritional risk screening was applied to the Mini Nutritional Assessment. The results were collected between February and August of 2018. Results: On the nutritional status of the institutionalized elderly, a majority of the 57.1% (8/14) were eutrophic, between the sexes, it was found that the men presented greater eutrophy than the women. Regarding swallowing complaints the results showed that 42.9% of the individuals evaluated had swallowing problems, 57.1% of the participants had no swallowing changes. In the sample studied, no patient had severe swallowing complications. Conclusion: Intervention in long-term care homes is essential because of the high number of institutionalized elderly people, presenting swallowing difficulties. It is necessary the presence of a multiprofessional team to evaluate each individual, in order to minimize the impacts of this clinical condition on the nutritional status of these elderly individuals.Item Micro-organismos mais prevalentes em mãos de manipuladores de alimentos(Universidade Católica do Salvador, 2018-12-10) Oliveira, Dalila Souza de; Menezes, Gisele Barreto Lopes; lattes.cnpq.br; Penna, Lilian Ferreira; lattes.cnpq.br; Menezes, Ana Paula Oliveira; lattes.cnpq.brThe increase of meals carried out outside the homes, the unit of feeding and nutrition also grew and this may be contributing to the growth of new cases of food poisoning. Studies have shown that food handlers are the main carriers of microorganisms capable of causing foodborne diseases. Staphylococcus aureus and Escherichia coli are among the microorganisms with the highest prevalence in microbiological analyzes carried out in the hands of food handlers. Staphylococcus aureus in humans have the nasal cavities as the main reservoir and are found in the hands and skin, Escherichia coli is part of the intestinal flora of man and warm-blooded animal, but these bacteria in excessive amounts cause damage to human health. The objective of this study is to review the most prevalent microorganisms in the hands of food handlers in the Food and Nutrition Units. It is a narrative review study, the articles selected were collected through searches in the databases: Virtual Health Library (VHL) and Scientific Electronic Library Online (SciELO) published in the last 10 years. Staphylococcus aureus was the microorganism most found in the microbiological analyzes carried out in the hands of food handlers, followed by thermotolerant coliforms, showing deficiency in the hygiene of the hands of the food handlers who work in the Food and Nutrition Units. It is necessary to create strategic actions of good practices to help reduce the risks of food contamination caused by the hands of food handlers.Item Perfil antropométrico de pessoas com HAM/TSP: estudo transversal(Universidade Católica do Salvador, 2018-12-10) Silva, Sandra Reis da; Fonseca, Erika Pedreira da; lattes.cnpq.br; Fonseca, Erika Pedreira da; lattes.cnpq.br; Albuquerque, Carolina Alves Rolim de; lattes.cnpq.br; Trindade, Geiza Santana Neri; lattes.cnpq.brMyelopathy associated with HTLV-1 / tropical spastic paraesthesia HAM / TSP, characterized as a demyelinating, inflammatory and progressive central nervous system (CNS) disease, leading to a gait impairment in the lower limbs, hindering the locomotion of these individuals. This study aims to characterize the anthropometric profile of people with HAM / TSP. Methodology: A cross-sectional study where patients with a probable or defined HAM / TSP diagnosis according to World Health Organization (WHO) standards were treated at a referral unit in the city of Salvador. Sixteen patients of both sexes were evaluated, where they signed the free and informed consent form. A socio-demographic questionnaire and anthropometric data were collected. Results: It was observed that 62.5% of the participants were female and aged between 32 and 64 years, mean age was 53 years, as for marital status, 50% were married. It evidenced the presence of overweight in both sex and of obesity only among women. Presence of risk for metabolic complications was observed in 60% of the women according to the waist circumference and an accumulation of fat in the neck region in both sex, being 50% female and 83.5% in the masculine. Conclusion: Individuals with HAM / TSP were overweight and at risk for the onset of metabolic complications. In view of the results presented here, it opens the door to the emergence of new studies related to the anthropometric parameters, thus collaborating to broaden the knowledge of this health condition.Item Avaliação qualitativa das preparações de cardápios oferecidos em uma unidade de alimentação e nutrição em Salvador-BA(Universidade Católica do Salvador, 2018-12-10) Jesus, Josiane Leal de; Leite, Catarina Lima; lattes.cnpq.br; Leite, Catarina Lima; lattes.cnpq.br; Penna, Lilian Ferreira; lattes.cnpq.br; Bahia, Mariluze de Pinho; lattes.cnpq.brObjetive: To evaluate qualitatively the menus, through the method of Qualitative Assessment of Menu Preparations (APQC), offered in a Food and Nutrition Unit located in the city of Salvador - Bahia. Methods: This is a descriptive, qualitative study carried out at a UAN located in Salvador -BA. The method of qualitative evaluation of the menu preparations (APQC) offered in 56 days was applied. Results: in the analysis of the menu, the presence of leafy leaves was verified in 95% of the evaluated days. The preparations served indicated very harmonious varieties of colors and without monotony, presenting 5% of equal colors. In 78.57% of the evaluated days, the menu presented more of a food rich in sulfur causing flatulence. Of the most frequent fatty meats, it is worth mentioning Tuscan sausages with 12.50% of the evaluated days. Frying was present in 3.57% of the evaluated days. Conclusions: It was possible to conclude that the presence of the nutritionist in the setup of the menus is essential to offer healthy and balanced nutrition.Item Excesso de peso e apiposidade abdominal em indígenas Fulni-ô de Águas Belas (PE)(Universidade Católica do Salvador, 2018-12-10) Bigdêdd, Natanna Barbosa; Silva, Amanda Valente da; lattes.cnpq.br; Silva, Amanda Valente da; lattes.cnpq.br; Menezes, Gisele Barreto Lopes; lattes.cnpq.br; Trindade, Geiza Neri; lattes.cnpq.brThe influences of other cultures on the indigenous lifestyle can explain several behavioral changes between the different tribes that occupy the Brazilian territory. Regarding the changes in health, understanding that food practices are also subject to external influences, changes in the body composition of these individuals are observed. Thus, the objective of this study was to describe the anthropometric profile of an indigenous population of the Fulni-ô ethnic group from Águas Belas (PE). Anthropometric data were collected from 91 individuals, of both sexes, aged between 20 and 59 years. For men, 61.1% were overweight and 72.7% were women. They were not identified in the study population. Regarding the measurement of the waist circumference measure, considering that its elevation indicates a risk for the development of metabolic complications associated with obesity, the results were: 83.6% of the women and 44.5% of the men in risk conditions. The case of the Fulni-ô indigenous adult population makes clear the importance of evaluating the anthropometric profile of indigenous groups, primarily due to the consequences of social and cultural changes that directly affect the characteristics of food and, consequently, anthropometric indicators.
